vegetable chilli
Serves 4
? cup quinoa
1 onion (diced)
1 carrot (diced)
2 sticks celery (diced)
1 tbsp olive oil
2 courgettes (diced)
½ red pepper (grilled to remove skin, washed and diced)
1 cup walnut halves (lightly roasted and chopped)
1.5 cups cooked red kidney beans
2½ cups carrot juice
rind of 1 orange
½ tsp nutmeg
1 dsp paprika
black pepper (optional)
Method
1. Cook the quinoa in 2 cups boiling water for 15 minutes
2. Sauté the onion, carrot and celery in the oil until they soften,
then add the courgettes and red pepper and continue to sauté until
they soften
3. Grind 1/2 of the walnuts and add to the vegetables, along with the
remaining walnuts and the cooked quinoa
4. Add the remaining ingredients, mix well and spoon into a large shallow
gratin dish. Bake uncovered in the centre of the oven at 200ºC/400ºF/gas
mark 6 for 30 minutes
